Cheesy Spaghetti Squash

Switching out the carbs does not mean you need to switch our the taste. With Amici’s creamy spaghetti squash pasta, you can still enjoy a big bowl of gooey goodness.
Ingredients

1 large Amici squash
Olive oil
2 tbsp butter
4 cloves garlic, minced
1 cup freshly grated parmesan cheese
1 teaspoon Italian seasoning
1¼ cups mozzarella cheese, divided
6 ounces baby spinach
2 tomatoes
Salt, to taste
Freshly ground black pepper, to taste
Chopped fresh parsley, for garnish, optional

STEP 1
Preheat: Heat oven to 400°F; line a baking sheet with parchment or foil.
STEP 2
Bake Squash: Halve squash lengthwise, remove seeds, brush with olive oil, season with salt and pepper. Place cut-side down on the sheet and bake 35–40 min, until tender. Cool slightly.
STEP 3
Shred: Use a fork to scrape out squash strands, leaving a ¼-inch border. Set strands aside; return shells to the sheet.
STEP 4
Add Cheese & Veggies: Reduce heat, stir in Parmesan, Italian
seasoning, squash strands, ¾ cup mozzarella, red tomato, and
spinach. Season to taste.
STEP 5
Fill & Bake: Spoon mixture into squash shells, top with remaining mozzarella, and bake 10–12 min, until melted.

Sprinkle with parsley and cut boats in half to serve.
